The Fatback Pork Project is a program built by Chefs, restaurateurs, forward thinkers, writers and entrepreneurs with the mission of restoring small scale hog farming in the southeastern United States. Beginning with this idea and a modern, USDA inspected plant in Eva, Alabama, Fatback Project works with family run farms who raise old-line heritage breed hogs.
